Easy 15-minute vegan pasta dish

Whilst aparthotel Birmingham has a large array of neighbouring restaurants, eateries, and cafes in close proximity, there are some evenings when you’ve arrived home from a long day at work or lectures at university, and you just want to whip something up quick and simple for tonight’s dinner.


We have a selection of small supermarkets local to us, such as Sainsburys and the Co-op, and we will soon have a supermarket right here in aparthotel Birmingham, meaning you won’t even have to leave the building to grab this week’s groceries!


For this month’s recipe inspiration, we want to show you how you don’t have to have a fridge bursting with ingredients to make something delicious, healthy, and filling. We have also made this month’s recipe vegan friendly. This recipe is to feed 2 people.

Ingredients:
• 1 whole 400ml tin of coconut milk
• Fusilli pasta (or any pasta of your choice)
• Fry Light
• Cherry vine tomatoes
• 1 white onion, finely chopped
• 1 vegetable stock pot, dissolved into 500ml of boiling water
• juice of 1 lemon
• 1 tsp of mixed herbs

Method:
Thoroughly wash your tomatoes and spinach, finely chop your onion, and slice your lemon into 4 quarters.
Place 1 serving of pasta (2 handfuls) into a saucepan full of water and cook until soft.
Spritz another saucepan with Fry Light and added your chopped onion and sauté until slightly golden.
Add tomatoes and vegetable stock to the pan
Season with mixed herbs, salt, and pepper.
Squeeze the juice from the lemons into pan.
Drain the pasta and add to the sauce and vegetables, along with the spinach and be sure to stir often.
Mix and cover for 10 minutes.
